Ingredients:
2 cups shredded mozzarella cheese
1 cup almond flour
2 tablespoons cream cheese
1 large egg
1 teaspoon Italian seasoning
1/2 teaspoon garlic powder
1/2 cup low-carb pizza sauce
1/4 cup sliced pepperoni
1/4 cup sliced black olives
1/4 cup grated Parmesan cheese
Fresh basil leaves for garnish (optional)
Instructions:
Preheat the Oven:
Preheat the oven to 375 degrees Fahrenheit (190 degrees Celsius).
Prepare the Dough:
Combine the shredded mozzarella cheese and cream cheese in a microwave-safe bowl. Microwave in 30-second intervals, stirring in between, until fully melted and well combined.
Add the almond flour, egg, Italian seasoning, and garlic powder to the melted cheese mixture. Mix until a dough forms.
Roll and Cut:
Place the dough between two sheets of parchment paper and roll it out into a thin, even layer.
Use a pizza cutter to cut the rolled-out dough into small chip-sized triangles.
Bake the Chips:
Transfer the cut dough onto a baking sheet lined with parchment paper.
Bake in the preheated oven for 10-12 minutes or until the edges are golden brown and the chips are crisp.
Prepare Toppings:
While the chips are baking, prepare your toppings. Slice the pepperoni and black olives.
Add Toppings and Bake Again:
Remove the chips from the oven and spread a thin layer of low-carb pizza sauce over each chip.
Sprinkle the sliced pepperoni and black olives over the sauce.
Top with grated Parmesan cheese.
Second Bake:
Place the topped chips back in the oven for an additional 5 minutes or until the cheese is melted and bubbly.
Serve and Garnish:
Remove from the oven and set aside for a few minutes to cool.
Garnish with fresh basil leaves if desired.
