Ingredients
For the Chicken:
- 4 boneless, skinless chicken breasts
- 2 tablespoons olive oil
- Salt and pepper, to taste
For the Creamy Garlic Sauce:
- 4 cloves garlic, minced
-One cup of low-sodium chicken broth, ideally - 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper, to taste
For Garnish & Serving:
- Fresh parsley, chopped
- Cauliflower rice or zucchini noodles (zoodles) (optional)
Instructions
1. Prepare the Chicken:
- Sprinkle salt and pepper on both sides of the chicken breasts.
- In a large skillet, heat the olive oil over medium-high heat.
- Sear the chicken breasts for 6-8 minutes on each side until golden brown and fully cooked (internal temperature of 165°F/74°C).
- The chicken should be taken out of the skillet and placed aside.
2. Make the Garlic Sauce:
- Reduce the heat to medium and add minced garlic to the same skillet. Sauté for about 1 minute until fragrant.
- Deglaze the skillet by pouring in the chicken broth, scraping up the browned bits from the bottom of the pan for added flavor.
- Stir in the heavy cream, Parmesan cheese, and Italian seasoning. Simmer the mixture for 5 minutes, stirring occasionally, until the sauce thickens slightly.
3. Combine & Finish:
- Return the chicken breasts to the skillet, spooning the sauce over the top.
- Simmer for another 5-7 minutes, allowing the chicken to soak up the flavors and the sauce to thicken further.
- Adjust seasoning with additional salt and pepper, if necessary.
Serving:
- Before serving, garnish with freshly cut parsley.
- Optional: Serve over cauliflower rice or zoodles for a low-carb side.
