Ingredients:

One pound of skinless, boneless, cooked and shredded chicken breasts

1 tablespoon olive oil

1 teaspoon cumin

1 teaspoon chili powder

1/2 teaspoon garlic powder

Salt and pepper to taste

4 low-carb tortillas

1 cup shredded cheddar cheese

1/2 cup chopped (any colour) bell peppers

1/4 cup diced red onion

2 tablespoons chopped fresh cilantro (optional)

Serve with guacamole and sour cream (optional).

Instructions:

Prepare the Chicken:

Season the chicken breasts with cumin, chili powder, garlic powder, salt, and pepper.

With a pan over medium heat, preheat the olive oil.

Cook the chicken breasts for 6-8 minutes per side, or until thoroughly done.

Shred the cooked chicken using two forks.

Assemble the Quesadilla:

Spread the low-carb tortillas out on a clean surface.

Divide the shredded chicken among the tortillas in an equal layer.

Sprinkle the chicken with crumbled cheddar cheese.

Add diced bell peppers, red onion, and cilantro.

Cook the Quesadilla:

To make a half-moon shape, fold each tortilla in half.

In a clean skillet over medium heat, cook each quesadilla for 2-3 minutes on each side or until the cheese is melted and the tortillas are golden brown.

Serve:

Remove the quesadillas from the griddle and set aside for a minute to rest.

Slice each quesadilla into wedges.

Top with sour cream and guacamole, if you’d like.
