Ingredients:
- 2 large chicken breasts, boneless and skinless
- 4 cups lettuce, chopped (romaine or mixed greens)
- 1 small red onion, thinly sliced
- 8 slices bacon, cooked and crumbled
- 1 cucumber, sliced
- 4 pickles, sliced
- 1 avocado, sliced (optional)
- 1/4 cup grated Parmesan cheese (optional)
- Salt and pepper to taste
For the Marinade:
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1 teaspoon dried thyme
- 1 teaspoon dried oregano
- 1/2 teaspoon paprika
- Salt and pepper to taste
For the Dressing:
- 1/4 cup olive oil
- 2 tablespoons apple cider vinegar
- 1 tablespoon Dijon mustard
- 1 teaspoon lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
- Start by marinating the chicken breasts. In a bowl, whisk together the olive oil, minced garlic, dried thyme, dried oregano, paprika, salt, and pepper. Place the chicken breasts in the marinade, making sure they are completely coated. Cover and chill for at least 30 minutes, preferably overnight for the best results.
- Preheat your grill to medium-high heat. Once the grill is hot, set the marinated chicken breasts on it. Cook for 6-8 minutes on each side, or until the chicken is cooked through and has nice grill marks. Remove from the grill and allow it cool for a few minutes before slicing into strips.
