Ingredients:

  • 1 pound ground beef (preferably grass-fed)
  • 1 medium onion, diced
  • 3 cloves garlic, minced
  • 1 bell pepper, diced (any color works)
  • 1 can (14 ounces) diced tomatoes
  • 1 can (6 ounces) tomato paste
  • 1 cup beef broth (preferably homemade or low-sodium)
  • 2 tablespoons chili powder
  • 1 tablespoon cumin powder
  • 1 teaspoon paprika
  • 1 teaspoon dried oregano
  • 1/2 teaspoon of cayenne pepper (modify to taste).
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Optional toppings include shredded cheese, sour cream, avocado slices, and chopped cilantro.

Instructions:

  1. In a big pot or Dutch oven, bring the olive oil to a medium heat.
  2. Add diced onions and bell peppers to the pot. Sauté until they start to soften, about 3-4 minutes.
  3. Add minced garlic and cook for another minute until fragrant.
  4. Push the vegetables to one side of the pot and add the ground beef to the empty space. Break up the beef with a spoon and cook until browned, stirring occasionally.
  5. Once the beef is browned, stir it into the vegetables in the pot.
  6. Add diced tomatoes (with their juices), tomato paste, beef broth, chili powder, cumin, paprika, dried oregano, cayenne pepper, salt, and pepper to the pot. Stir well to combine all ingredients.
  7. Bring the chilli to a simmer, then turn the heat down to low. Cover and let it simmer for about 1 hour, stirring occasionally.
  8. After 1 hour, taste the chili and adjust seasoning if needed. If the chili is too thick for your liking, you can add more beef broth to reach your desired consistency.
  9. Continue simmering the chili, uncovered, for an additional 15-30 minutes to allow the flavors to meld and the chili to thicken.
  10. When the chilli has reached the appropriate consistency, remove it from the fire.
  11. Serve the chili hot, garnished with your favorite keto-friendly toppings such as shredded cheese, sour cream, avocado slices, or chopped cilantro.
